Quick and Easy Delicious Coconut Rice
This is my go-to recipe for quick, easy and delicious coconut rice that is perfectly seasoned and perfectly fluffy. It takes just a few simple ingredients and a few minutes to make. Just be sure not to skip the last step. The key is all in that final fork fluff.
Serve this rice with fish, chicken, veggies, in an Asian-style salad or just enjoy it all on its own! It’s so perfectly flavored and delicious you really can’t go wrong however you eat it!
INGREDIENTS
1 cup water
1 14-ounce can coconut milk (see notes)
1/2 teaspoon salt
1 cup white rice (Jasmine rice is my favorite to use)
DIRECTIONS
In a medium-sized pot set over high heat, bring the water, coconut milk and salt to a boil. Stir in the rice. Lower the heat to medium and continue cooking, stirring frequently, but placing the lid partially over the pan when you aren’t stirring, until the liquid is absorbed and the rice is tender, about 10-12 minutes. If the rice hasn’t cooked through and the liquid has evaporated, add more water, 1/4 cup at a time, stirring and cooking after each addition, until it’s finished cooking.
Remove from heat. Place the lid on the pot and set aside for at least 10 minutes. Fluff with a fork and enjoy!
NOTES
For the coconut milk, I prefer to use a reduced fat one so I still get some of the creaminess without the full fat content. However, you can use a light coconut milk, or for a truly decadent and rich flavor and texture, you can use a full fat coconut milk.
